A tribute to classic Norwegian pastries, recreated using the country’s pioneering sour brewing techniques and a nod to its foraging culture. Starting with a sour Citra & Mosaic base fermented with kveik yeast, we added Lingonberry & Raspberry at the end of fermentation to keep the fruit flavours upfront and fresh.
